2 slices of sourdough bread

1 ripe avocado, mashed

4 slices of crispy bacon

2 slices of sharp cheddar cheese

1 tablespoon mayonnaise

1 tablespoon butter

Salt and pepper to taste

Optional: Fresh arugula or spinach for extra crunch

Begin by cooking the bacon. In a skillet over medium heat, cook the bacon until crispy, then remove and place on paper towels to drain excess fat.

    In the same skillet, use the bacon drippings to toast the bread. However, for an extra delightful finish, melt the butter in another pan on low-medium heat.

      Once the butter is melted, spread mayonnaise on one side of each slice of sourdough bread. Place the bread, mayo-side down, into the skillet.

        On the unbuttered side of one slice of bread, layer half of the cheese slices, followed by the mashed avocado, crispy bacon, and any optional greens like arugula. Top with the remaining cheese slices.

          Place the second slice of bread on top, mayo-side up. Grill the sandwich for about 3-4 minutes or until golden brown.

            Carefully flip the sandwich with a spatula and grill the other side for another 3-4 minutes until the cheese is melted and the bread is crispy.

              Once done, remove the sandwich from the skillet and let it sit for one minute before slicing in half. This allows the cheese to settle slightly for easier eating.
