In a large mixing bowl, whisk together the all-purpose flour, 1/2 cup granulated sugar, baking powder, and salt until well combined.

In another bowl, beat the eggs, then whisk in the whole milk, melted butter, and vanilla extract until smooth.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.

Preheat your oven to 180°C (350°F) and grease a donut pan with non-stick spray.

Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.

Bake in the preheated oven for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

While the donuts are cooling, prepare the crème brûlée filling. In a saucepan, heat the heavy cream on medium heat until it begins to simmer; then remove it from the heat.

In a separate bowl, whisk together the remaining 1/4 cup granulated sugar and 5 egg yolks until the mixture is pale and thick.

Slowly pour the hot cream into the egg mixture while whisking continuously to temper the eggs.

Return this mixture to the saucepan and cook on low heat, stirring constantly until thickened, about 5 minutes. Remove from heat and allow it to cool slightly.

Once the donuts have cooled completely, use a piping bag to fill each donut with the crème brûlée filling.

For the finishing touch, sprinkle the tops of the filled donuts with 1 tablespoon of granulated sugar and use a kitchen torch to caramelize the sugar until golden and crispy.

Let the sugar cool for a minute to harden before serving.
