Dublin Coddle

Zutaten
  

500g Irish sausages, preferably pork

400g streaky bacon, cut into pieces

4 large potatoes, peeled and sliced

2 large onions, thinly sliced

3 cloves garlic, minced

1 liter chicken or vegetable broth

2 tablespoons fresh parsley, chopped

1 teaspoon dried thyme

Salt and pepper to taste

1 tablespoon olive oil

In a large pot, heat the olive oil over medium heat. Add the sliced bacon and fry until crispy. Remove and set aside, leaving some fat in the pot.

    In the same pot, add the Irish sausages and cook them until browned on all sides, then remove and set aside with the bacon.

      Next, add the onions and garlic to the pot, sautéing until they become translucent and fragrant, about 5 minutes.

        Layer half of the sliced potatoes at the bottom of the pot, then add half of the cooked bacon and sausages. Repeat with the remaining potatoes, bacon, and sausages.

          Pour the chicken or vegetable broth over the layered ingredients, ensuring everything is submerged.

            Sprinkle the dried thyme, salt, and pepper over the top. Bring the pot to a gentle simmer and cover with a lid.

              Cook for about 45 minutes to 1 hour, or until the potatoes are soft and the flavors have melded together beautifully.

                Just before serving, stir in the fresh parsley for a pop of color and freshness.
