1/4 cup unsalted butter, melted

1 cup buttermilk

Preheat your oven to 220 °C (425 °F) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Pour the melted butter and buttermilk into the dry ingredients and add the honey if using. Stir gently with a wooden spoon until just combined; do not over-mix. The dough should be slightly sticky.

        Dust a clean surface with flour and turn the dough out onto it. Pat the dough down gently to a thickness of about 2.5 cm (1 inch).

          Using a sharp biscuit cutter or a large glass, cut out biscuits from the dough. Place them on the prepared baking sheet, allowing some space between each biscuit.

            For a cathead effect, do not twist the cutter—just press down and pull straight up, which gives the biscuits a rustic, fluffy look.

              Bake in the preheated oven for 10-12 minutes or until golden brown and puffed up.

                Remove from the oven and brush the tops with a little melted butter for added flavor and shine.
