4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 large eggs

1 tablespoon Dijon mustard

1/4 cup all-purpose flour

1/4 cup fresh parsley, chopped (for garnish)

Olive oil for frying

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper and set aside.

    In a shallow bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well to ensure all ingredients are evenly combined.

      In another shallow bowl, whisk together the eggs and Dijon mustard until smooth.

        Place the flour in a third shallow bowl, seasoning it lightly with salt and pepper.

          Take each chicken breast and first coat it in flour, shaking off any excess.

            Dip the floured chicken breast into the egg mixture, ensuring it's fully coated.

              Finally, press the chicken breast into the Parmesan and breadcrumb mixture, coating both sides thoroughly.

                In a large skillet, heat olive oil over medium-high heat. Once hot, add the coated chicken breasts (you may need to do this in batches). Cook for about 3-4 minutes on each side, or until they are golden brown and crispy.

                  Transfer the browned chicken breasts to the prepared baking sheet and place them in the preheated oven. Bake for an additional 15-20 minutes, or until the chicken reaches an internal temperature of 74°C (165°F).

                    Once baked, remove from the oven and let rest for a couple of minutes. Garnish with chopped parsley before serving.
