1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 large eggs

1/2 cup buttermilk

1 teaspoon vanilla extract

1 can (8 oz) pineapple slices, drained

Maraschino cherries for garnish

Cooking spray or cupcake liners

Preheat your oven to 350°F (175°C). Prepare a muffin tin by either greasing with cooking spray or lining with cupcake liners.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy, about 3-4 minutes.

        Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.

          Mix in the buttermilk and vanilla extract until well combined.

            Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

              Place a pineapple slice in the bottom of each muffin cup. If you cut the slices into smaller pieces, you can fit more in each cup for a chunkier texture.

                You can place a maraschino cherry in the center of each pineapple slice for added color and flavor.

                  Spoon the cake batter over the tops of the pineapple slices until each muffin cup is about two-thirds full.

                    Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

                      Once baked, let them cool in the muffin tin for about 5 minutes before inverting onto a wire rack to cool completely.

                        Serve warm or at room temperature, and enjoy the delightful upside-down presentation!
