2 cups sushi rice

2 1/2 cups water

1/4 cup rice vinegar

2 tablespoons sugar

1 teaspoon salt

8 ounces sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon Sriracha (adjust for spice level)

1 green onion, finely chopped

1 sheet nori, cut into small squares

1/4 cup sesame seeds (toasted, for garnish)

Soy sauce, for serving

Sushi Rice Preparation: Rinse the sushi rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low and cover. Cook for 18-20 minutes until all the water is absorbed. Remove from heat and let sit covered for an additional 10 minutes.

    Season the Rice: In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low until the sugar dissolves. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

      Prepare Spicy Tuna Mixture: In a separate bowl, combine the diced tuna, mayonnaise, Sriracha, and chopped green onion. Mix well and adjust seasoning or spice level as needed.

        Form the Crispy Rice: In a frying pan over medium heat, add vegetable oil for frying. Once hot, take a small amount of seasoned rice (about 2 tablespoons) and mold it into a compact rectangle or oval shape. Carefully place it in the oil and fry until golden brown and crispy on both sides (about 2-3 minutes per side). Remove and drain on a paper towel. Repeat with remaining rice.
